Roasted Lamb Shoulder

3kg Lamb Shoulder Roast

Combine 1/2 cup olive oil with 3-4 cloves of crushed garlic, a handful of coarsely chopped fresh rosemary and fresh mint.

Rub mixture all over the lamb shoulder and season with salt and pepper.

Place lamb shoulder in baking tray / pyrex dish in the oven for approximately an hour at 180 degrees C.

Serve with vegetables and potatoes. Extra mint sauce, optional
