Simple Cooking Guide

Rib-eye loves heat, but its marbling needs enough time to render.

Season simply and cook over strong heat to develop a good crust. Medium-rare is excellent, although taking a well-marbled Rib-eye slightly further can allow more of its internal fat to render.

Rest before serving and don't drown it in sauce. You've already paid for the flavour.

Ray's Notebook: Marbling isn't decoration. It's flavour waiting for heat. Give a good Rib-eye enough heat to render that fat and very little else needs to be done.
