PASTURE RAISED SIRLOIN STEAK

Sirloin occupies a wonderful middle ground in the steak family. It offers excellent tenderness while retaining the deeper beef flavour that can sometimes be sacrificed in exceptionally lean cuts.

Its characteristic outer fat helps protect the meat during cooking and contributes flavour as it renders over a hot braai or in a heavy pan.

For customers who find Fillet wonderfully tender but want a little more beef character, Sirloin is an excellent next choice.

Simple Cooking Guide

Don't be too eager to trim away the fat before cooking. It is part of what makes Sirloin special.

Start with good heat and, where practical, hold the fat edge against the hot surface briefly to begin rendering it. Then cook the steak on both sides until it reaches your preferred doneness.
